While overall size is similar, the European lobsters are usually darker and with smaller claws. Their American cousins are found in the cold waters of the North Atlantic Coast from Newfoundland and allegedly as far south as North Carolina. They head for deeper waters in fall and shallower in spring. You get more meat with the clawed lobsters, which is a plus. Whole, they weigh about two pounds, and the meat is found just in the tail. Have you ever seen the head of a halibut? If you have, was it probably an adult, whose &lt;/span&gt;&lt;/span&gt;&lt;span style="color: #333333;"&gt;&lt;span style="background-color: white;"&gt;developmental pattern&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="background-color: white;"&gt;&lt;span style="color: #333333; font-size: 85%;"&gt; is rather incredible. At birth they have one eye one each side of the head and swim rather like a salmon. But when they reach six months, one of those eyes migrates to the other side, and they take on a flounder appearance.&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;span style="font-family: verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;div style="margin: 0in 0in 0pt;"&gt;&lt;br /&gt;&lt;span style="font-size: 85%;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin: 0in 0in 0pt;"&gt;&lt;span style="background-color: white; font-family: verdana; font-size: 85%;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin: 0in 0in 0pt;"&gt;&lt;span style="background-color: white; font-family: verdana; font-size: 85%;"&gt;Among flat fish, halibut is truly king, averaging some 24 to 30 pounds (and one monster halibut was recorded at a whopping 734 pounds). You can appreciate why these are favorites of sport fishing!&lt;/span&gt;&lt;/div&gt;&lt;span style="font-family: verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;div style="margin: 0in 0in 0pt;"&gt;&lt;br /&gt;&lt;span style="font-size: 85%;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin: 0in 0in 0pt;"&gt;&lt;span style="font-size: 85%;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin: 0in 0in 0pt;"&gt;&lt;span style="background-color: white; font-family: verdana; font-size: 85%;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div style="margin: 0in 0in 0pt;"&gt;&lt;span style="background-color: white;"&gt;&lt;span style="color: #333333; font-family: verdana; font-size: 85%;"&gt;But I digress. Each halibut also has two cheeks, and this explains why halibut cheeks might at times seem a bit pricey compared to halibut fillets (which are just a wee bit less succulent). Sometimes you may have difficulty finding any, after all, cheeks are only two to a face! If you’ve ever seen these medallions from an Alaska halibut, you might think they were giant scallops. And indeed you can use them like scallops. Over a century ago, one of my favorite California mollusks, the abalone, starred in a song composed by George Sterling and his friends (among them author Jack London), and published by none other than Carl Sandburg in &lt;i&gt;The American Songbook.&lt;/i&gt;&lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:9;"  &gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 0pt;" class="MsoNormal"&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:9;"  &gt; &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 0pt;" class="MsoNormal"&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:12;"  &gt;Imagine this group of artistic buddies back in 1907, harvesting the abalone from the bay and then repairing to George’s Carmel home. But if you’ve cooked shrimp or crab or clams, you’ll love adding abalone to your menu. Unlike George and Jack, you don’t need to go diving or even wading—just order in online from a reputable &lt;a href="http://www.giovannisfishmarket.com"&gt;seafood market&lt;/a&gt; that has its own fleet. When you order exotic seafood such as abalone, you want to be sure you are getting the freshest possible &lt;a href="http://www.giovannisfishmarket.com"&gt;seafood delivery&lt;/a&gt; -- and that means getting it direct from the boat that day.  You're worth it!&lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:9;"  &gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;br /&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 0pt;" class="MsoNormal"&gt;&lt;span style=";font-family:'Calibri','sans-serif';font-size:12;"  &gt;&lt;o:p&gt;&lt;br /&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="margin: 0in 0in 0pt;" class="MsoNormal"&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:9;"  &gt;&lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:9;"  &gt;&lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:12;"  &gt;Then follow these basic steps when your fresh cleaned whole abalone arrives:&lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:9;"  &gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="margin: 0in 0in 0pt 0.5in; text-indent: -0.25in;" class="MsoNormal"&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:12;"  &gt;1.&lt;/span&gt;&lt;span style="font-size:7;"&gt;      &lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:12;"  &gt; Slice it into ¼” thin slices with a sharp chef’s knife the way you might a block of mozzarella.&lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:9;"  &gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 0pt 0.5in; text-indent: -0.25in;" class="MsoNormal"&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:12;"  &gt;2.&lt;/span&gt;&lt;span style="font-size:7;"&gt;      &lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:12;"  &gt;Now trim the tough outer skin from each slice. (Some make this step one, but I think you lose more of the meat that way.)&lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:9;"  &gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 0pt 0.5in; text-indent: -0.25in;" class="MsoNormal"&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:12;"  &gt;3.&lt;/span&gt;&lt;span style="font-size:7;"&gt;      &lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:12;"  &gt;The famous pounding. Some prefer to do it under fresh water, others between layers of plastic. Pound the slices until tender with a meat mallet and without tearing the flesh. Check before and after—you’ll feel the difference. It should be noticeably soft.&lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:9;"  &gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt; &lt;p style="margin: 0in 0in 0pt 0.5in; text-indent: -0.25in;" class="MsoNormal"&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:12;"  &gt;4.&lt;/span&gt;&lt;span style="font-size:7;"&gt;      &lt;/span&gt;&lt;span style=";font-family:'Arial','sans-serif';font-size:12;"  &gt;You now have tenderized “abalone steaks,” ready for your recipe! The problem is, many people don't know how to prepare fish to make it both appealing and appetizing.  After all, just because something is healthy doesn't mean it's going to be eaten.  In fact, unless something tastes good, most of us won't give it a second bite.  So today, we've decided to pass along one of our favorite fish recipes.  And it's probably pertinent to mention that as the weeks pass, we will be bringing to you a series of our favorite fish recipes.&lt;br /&gt;&lt;br /&gt;First of all, start with four or five &lt;a href="http://www.giovannisfishmarket.com/"&gt;fresh fish fillets&lt;/a&gt; of your choosing. In the meantime, preheat your oven to 475°.  Once the oven is preceded to the proper temperature, place your concoction into the oven and bake at 475° for eight to 10 minutes.  Fish is done when it flakes easily.&lt;br /&gt;&lt;br /&gt;Once you've removed your fish from the oven, you may top it with grated Monterey Jack cheese and bake again at 500° Fahrenheit until the cheese browns.  Remember though, the cheese should not burn;  it should lightly browned.  If you don't like Monterey Jack, you can use a variety of other cheeses.
