Fabulous Fish Recipes

I said before that you should be eating fresh fish at least once a week. The problem is, many people don't know how to prepare fish to make it both appealing and appetizing. After all, just because something is healthy doesn't mean it's going to be eaten. In fact, unless something tastes good, most of us won't give it a second bite. So today, we've decided to pass along one of our favorite fish recipes. And it's probably pertinent to mention that as the weeks pass, we will be bringing to you a series of our favorite fish recipes.

First of all, start with four or five fresh fish fillets of your choosing. As always, it's a good idea to order your fresh fish from an online fish market. For this recipe, it won't really matter what type of fish you purchase, this recipe is complementary to all fish.

After you have collected your 4 or 5 fish fillets, you should begin gathering your other materials. You will need 1 cup of white wine, two tablespoons fresh lemon juice, two diced tomatoes, one diced onion, half a cup of fresh cilantro, two large cloves of garlic, (garlic should be pressed), four tablespoon olive oil, two tablespoons of wine or rice vinegar, and one tablespoon of ground cumin.

Place your fish fillets in a 9 x 13 glass pan. A glass casserole dish will work just as well. Combine the aforementioned ingredients and pour them over your fish. In the meantime, preheat your oven to 475°. Once the oven is preceded to the proper temperature, place your concoction into the oven and bake at 475° for eight to 10 minutes. Fish is done when it flakes easily.

Once you've removed your fish from the oven, you may top it with grated Monterey Jack cheese and bake again at 500° Fahrenheit until the cheese browns. Remember though, the cheese should not burn; it should lightly browned. If you don't like Monterey Jack, you can use a variety of other cheeses. However, American cheese does not work particularly well for this recipe.
